Last week we finally got around to making our vanilla extract. Kaylin has been using pieces of vanilla when she bakes but extract is easier to measure.
The recipe is simple: 1 oz of vanilla beans slit lengthwise to expose the seeds and 1 cup of very good grade vodka (we used Absolut) and let that sit in dark bottles in a dark cupboard for about 2 months. We’ll agitate them ever 2 weeks or so to make sure the beans don’t stick together. That’s it! After 2 months, strain with cheese cloth and you have extract!
